Heres one:

Striker: Surely you can't be serious.
Rumack: I am serious…and don't call me Shirley.

and

A census taker once tried to test me. I ate his liver with some fava beans and a nice Chianti.

Also, does anyone know which film it is which has a recipe for chocolate brownies in the credits?

Sounds like something Kevin Smith would do, but I'm probably miles off.

I just wish for once that you could be in my shoes, Mr. Prosecutor, and then you would know something that you don't know: mercy!

I was going to guess the Maltese Falcon.  Googled it.  Oh, that film!  Didn't know it was shot in Malta.  I think that when it was made, the main character was supposed to be a victim/hero, but when I saw it in the 1990's I couldn't help thinking he'd brought it on himself.
